Ingredients:
· icing sugar for dusting · 1 cup sweet biscuit crumbs · 1 teaspoon baking powder · 1/2 cup cornflour · 1/2 cup cream · 1/3 cup butter, melted · 2 tablespoons lemon juice · 2 x 250g block PHILADELPHIA* Light/Regular Cream Cheese, softened · 3 x 55g eggs, lightly beaten - 3/4 cup caster sugar

Preparation:
· Combine biscuit crumbs and butter, press into the base of a 20cm spring form pan; chill. · Beat Philly* until smooth, stir in remaining ingredients (caster sugar, cream, eggs, lemon juice, baking powder and cornflour). · Pour mixture onto crumb crust and bake at 150C for 60 minutes. Allow to cool completely in oven and refrigerate for 2-3 hours before serving. |
